The craft and technique of preparing food is the focus here: knife skills, cooking methods, flavour, menu composition and the organisation of a professional kitchen. Practice sits alongside study of ingredients, nutrition, hygiene and cost. Graduates often work in kitchens, food production, catering, food media and hospitality businesses.
